I'm a big breakfast person.. It's funny because when I was younger I didn't used to be at all.. I would be one of those running to college on an empty stomach to then devour a big, late lunch later.. But one day, actually when I decided to get into healthier eating habits, I found out how crucial breakfast was, it kicks off your metabolism and has so many benefits.. So since then, and that's quite a while ago, I never ever miss breakie :) I love oatmeal, porridge, hot cereal and now my new thing is cracked wheat in the morning.. I feel like a million dollars after eating this bowl of healthy goodness.. Good morning Dubai ♥
Easy. Prep & Cook Time : 15 minutes
Serves 2 - 3
- 1/2 cup cracked wheat
- 1 1/2 cup of low fat milk (add less if you like it thicker, more if you like runny)
- 2 tsp brown sugar
- 1 sliced banana
- handful of almonds, toasted and crushed
- a dollop of mascarpone cheese
Bring the milk and sugar to a boil, then add the cracked wheat and simmer for about 8 minutes (or as directed on your pack).. You want the wheat to soften up but still have a crunch to it.. Stir occasionally so it doesn't stick to the bottom of the pan.. Pour the cracked wheat in a bowl, place bananas on top, add a dollop of mascarpone and sprinkle generously with the toasted almonds..
