I just got back from Beirut where I had a lovely time and even lovelier food.. But I actually missed Dubai, my little kitchen and busy bee life! I don't have much time to spend in the kitchen today so I need a quick yet tasty little meal..

Serves 1-2 persons

1kg cleaned, scrubbed & de-bearded mussels (ask the fishmonger to do it)
1 chopped onion
2 chopped garlic cloves
juice of half a lemon
1 cup white wine
½ cup cooking cream
½ cup chopped parsley
cracked black pepper to taste

In a pot, heat a knob of butter and some nut oil.. Cook the onions slightly before adding the garlic.. Then add the mussels and the lemon juice and stir them gently around for a minute or so.. Pour in the white wine, parsley and cracked pepper.. Close the lid and wait for the majority of the mussels to open, a few minutes usually.. Some mussels will not open, and if they don’t then please do not attempt to eat them, just discard those little buggers :)

Place your mussels in a bowl, pour the beautiful juices on top, and serve with some toasted bread to dip in the yummy broth.. Enjoy!
