Baked Crispy Chicken Strips

I went to the market today and was all excited about whipping up some incredibly intricate dish, but when I arrived home I was so hungry that I couldn't wait.. Plus I was on the phone with a friend so I did something that didn't require that much attention, and was particularly simple to make..

Serves 2 persons as a main meal or 4 persons as a little snack
  • 2 chicken breasts, cut into 8-10 strips
  • 1/4 cup milk
  • 1 TBL teriyaki sauce
  • 1/4 tsp all spice
  • 40g cornflakes, bran flakes, crushed (or breadcrumbs if you prefer)
  • 1/4 cup grated Parmesan
  • 2 TBL sesame seeds


Preheat the oven to 180C..

Combine the crushed cornflakes, Parmesan and sesame seeds in a bowl and set aside.. Whisk the milk, teriyaki, and all spice in another bowl, and let the chicken strips sit in the marinade for about 20 minutes.. Then remove the chicken from the bowl and coat them generously with the crumb mixture.. Place them on a tray covered with parchment paper and bake for 15-20 minutes (depending on the thickness of the strips)..

You can serve the chicken strips with a sweet chili or honey mustard sauce, or any other dip you fancy.. It's a great quick meal and also a lovely little snack when you have people over..
