Kaiserschmarrn (or the Austrian Pancake)

As I mentioned a little while ago, I have a German background as my Dad used to work there before we moved to Paris.. Don't ask me why, but yesterday evening I thought of what had happened to my Austrian math teacher (whom I was terrified of, as he was incredibly strict and a little weird), and that made me think of Kaiserschmarrn, which is a famous Austrian sweet dish.. It's a weird chain of thought, but it made me think of making it for breakfast today.. Kaiserschmarrn usually has raisins, but since I don't like raisins I just serve it plain.. Serve it with fruit compote or your favourite marmalade.. Delish!

Easy. Prep & Cook Time: ~20 minutes
Serves 2
  • 2 eggs
  • 1/2 cup flour, sifted
  • 1/3 cup castor sugar
  • 1/3 cup milk
  • 1/2 tsp vanilla
  • 3 - 4 TBL of butter
  • pinch of salt
  • raisins (if you like these little sticky things :)
  • icing sugar for dusting

Separate the eggs in two different bowls.. Whisk the yolks with the sugar, vanilla and butter, then add the flour and the milk in two parts.. In the other bowl whisk the egg whites with a little salt until they form soft peaks, and gently fold them into the dough mixture.. Heat a knob of butter in a non-stick pan over medium heat, and pour the entire dough into the pan.. Cover and let it cook for a few minutes, then flip the pancake (don't worry if it breaks as you will cut it in little squares anyways).. With the turner, just break the pancake into small pieces as it's still in the pan.. Take it off the heat, plate it and dust with icing sugar before serving.. Enjoy :)
