Raspberries with Vanilla Mascarpone

Wow, I haven't even been back a full week yet and was running around like a mad bunny trying to juggle things between family, bakeries, food shoots and D's Kitchen stuff.. Busy week, but I'm not complaining, I'm happy to be back home.. I've also been having a very emotional week from very good days to days that aren't too jolly, but I guess that's life.. Anyways, back to the foodie stuff.. I've been cooking almost every day since I got back home (yes that's how much I missed my little kitchen ;) but I haven't uploaded the recipes yet.. So I will leave you with a deliciously decadent sweet treat that I did for my column in BBC Good Food ME last month "Cooking in D's Kitchen".. Quick, easy and absolutely delish!


Easy. Prep & Cook Time: 10 minutes
Serves 6 – 8

  • 750g Mascarpone cheese
  • 2 - 3 tbsp icing sugar
  • 4 - 5 tbsp honey
  • seeds of half a vanilla bean

In a bowl, whisk the honey, icing sugar and vanilla seeds with the mascarpone until well combined. 

As you’re plating the dessert, start with the vanilla mascarpone, then lay the raspberries on top, add some more mascarpone and repeat the process until you have a lovely tower of raspberry and mascarpone goodness! 

Chill it in the fridge for extra yumminess ;)
