A Peanut Butter Pie for Mikey

This is a bit of a different post than my usual ones. Yes, Peanut Butter Pie is one of my all time favourites because it is the definition of decadent and OMG so scrumptious, but I've been wanting to post this recipe for quite some time now yet never got to it.

I don't know Mikey personally, but I happened to fall on a post by a fellow food blogger, Jennifer from New York about six months ago. I remember reading one of her tweets which sounded off, and when I looked into it further, I realized that her husband of 18 years had passed away from a sudden heart attack. I was pregnant back then and even more emotional than I usually am, so I couldn't forget Jenny's tweets, and her simple request asking people to make her husband's favourite treat, the Peanut Butter Pie. Here I was in Dubai, miles away from New York, reading a stranger's tweets which felt so close, so personal. And even though I don't know Jenny, I had the urge to do this. As many other bloggers did actually. Jenny's friends from the food blog White on Rice made this special video for her (posted below). It makes me tear every time I watch it. It's so beautifully made and incredibly touching.

I am sorry it took me this long, I must admit I even hesitated to post this now. But I thought better late than never. This is my pie for Mikey.

Prep & Bake Time: ~3 hours ( including 2hrs cooling time)
Makes 1 Pie (28cm)
  • 1 cup smooth peanut butter
  • 100g dark chocolate
  • 3 eggs
  • 1/3 cup castor sugar
  • 1 tsp vanilla
  • 400g Philadelphia cream cheese
  • 200g dark chocolate digestive cookies
  • 100g butter
  • ¼ cup crushed peanuts

Preheat the oven to 160C. In a bowl, whisk the peanut butter, cream cheese, eggs, sugar and vanilla until creamy then set aside

In a food processor blend the digestive cookies and the butter until it resembles breadcrumbs. Then press the crumbs on the bottom of a 26 cm tart pan and brown the base in the oven for 10 - 15 minutes.

Pour the peanut butter mixture into the form, and bake in the oven for 35 – 40 minutes (until the filling is firm). Remove from the oven, let it cool and refrigerate for at least a few hours.

Soften the dark chocolate over a double boiler, drizzle the pie with a generous amount of melted chocolate, and sprinkle the crushed peanuts on top.
