Golden Cod & Soy Zucchini

A lovely dish to make when you're in the mood for a hearty yet light fish dish.. Cuz why does light have to mean tasteless? Never ever! It's all about yummy food in my kitchen..

Serves 1-2 persons

2 cod fillets
2 zucchini
2 TBL reduced salt soya sauce
1 TBL creme fraiche
garlic clove
squeeze of lemon
sprinkle w/ some toasted sesame (optional)

Slice the zucchini in thin wedges and heat them in a pan with a little olive oil.. Make sure they are soft & turn golden brown, add the soya sauce and pepper to taste and cook for another few minutes..

Put them aside.. Then add a knob of butter & some olive oil in the pan, add garlic and brown it a little, make sure to not burn it (to avoid bitterness).. Then remove the garlic, drench your fillet in a little flour and season with salt & pepper before frying the fillets on medium heat for about 1-2 minutes on each side (depending on the thickness of the fillet)..

The cod should be firm to the touch, not too firm so it doesnt dry out as it would be a shame for such a lovely fish! When you are almost ready, squeeze a little lemon over the fillet.. Now place your zucchini on a plate, add a dab of creme fraiche and sprinkle with sesame seeds if you wish.. Then lay the cod fillet over yor zucchini, and voila! Enjoy :)
