Golden Sausages with Sweet Onions & Apples

I used to live in Germany when I was tiny.. What I love most about Deutschland is the bread, the sweet stuff and the different types of sausages they have.. But most of all I love Familie Kohl, who truly are my second family & took such amazing care of me.. Now my hubby doesn't enjoy this dish as much as I do, but I love the saltiness of sausages with the sweet/sauerness of the apples.. So if you're into German stuff and sausages, try this..

Serves 2 persons

6 sausages (any kind really, depends what you're into ;)
1 sliced onion
1 big apple (shredded in thin slices)
1 tsp soya sauce
1/2 cup red wine
1/2 cup chicken stock
1/2 tsp sage
1/2 tsp nutmeg
a knob of butter
salt & pepper to taste
some nut oil for the pan

In a pan heat a little butter and some nut oil.. Cook the onions until glazy, then add the shredded apple, soya, nutmeg, salt & pepper.. Cook over medium heat until everything is soft and looks "sauerkraut" like, for about 15 minutes..

Season the sausages with the sage, salt & pepper.. Fry them in a sizzling pan until they are firm to the touch and golden brown.. Once they are done, put them aside and deglaze your pan with the wine, scraping all the yummy brown bits.. Add the stock and simmer until it thickens.. When you are almost ready, add the butter to cream your sauce and season with salt & pepper.. Assemble your plate with the onions & apples first, then lay the sausages on top, and finish by pouring the beautiful sauce over it.. Guten Appetit :)
