Quick & Easy Banana Bread

I tried a new coffee blend this morning, and as my Americano was brewing I spotted bananas that had seen better days.. So instead of just discarding them I decided to make a quick Banana Bread.. See the thing about any bake with banana is that the more ripe the bananas, the better the bake.. And let me tell you, I was a very happy D this morning.. A cup of freshly brewed coffee and a slice of this beautifully moist Banana Bread..

3 very ripe bananas, well mashed
3 TBL melted butter
2 eggs
1 cup sifted flour
~1/2 cup white sugar (depends on the ripeness of the bananas)
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp allspice
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder

Preheat oven to 180C

In bowl, whisk the bananas, eggs, sugar and melted butter.. In another bowl, sift together all the other ingredients and add them to the banana mixture, combining them well but without over mixing.. Pour the batter in medium sized loaf (aligned with parchment paper if you prefer) and bake for about 23 minutes or until you insert a toothpick and it comes out dry.. You can also add nuts or chocolate chips before pouring the batter into the baking dish.. Delicious!
