Glazed Salmon & Sautéed Veggies

Let's face it.. I have gained a little weight and need to start eating more of the fish and veggie kind of meals.. Especially after my frustrated outburst this morning - I didn't get into my favorite jeans!! And it’s certainly not my cooking that’s making me gain weight – I do try to balance my recipes, but it’s having munched on a few too many sweets lately.. So salmon it is, and even though it's not exactly diet food, it's a start! ;)

Serves 2
  • 2 salmon fillets, no skin
  • 2 TBL mirin
  • 2 TBL light soya sauce
  • 2 tsp brown sugar
  • 1/2 tsp sesame oil
  • 1 pak choi, cut in length and in half
  • 1 pack of brown mushrooms, cut into thick slices
  • 1 tsp grated ginger
  • 1/2 tsp grated garlic
  • 1 TBL balsamic
  • 1 TBL oyster sauce
  • chili sliced or flakes (optional)
  • some nut oil

In small bowl, mix the mirin, soya, sugar and sesame oil.. Let the salmon sit in the marinade for a few minutes.. Heat a non stick pan on medium heat (don't grease it), and cook the salmon for about 2-3 minutes on one side (depending on thickness), then turn the fillets, add the marinade and cook for another 2-3 minutes.. 

In another frying pan heat some nut oil, cook the ginger and garlic for just a bit, then add the pak choi and balsamic, and cook for another minute or so.. Add the mushrooms, oyster sauce and chili if you wish, then cook for another minute or two.. Plate the veggies and place the salmon on top.. Sprinkle with a bit of spring onions and voila!
